I seem to remember there were a lot of veggie recipes in The River Cafe
cookbooks. In fact, the green version might focus on veg even mroe. But it's
been a long time since I've glanced at them in the store. A web search could
help you, of course.

Nigella Lawson's Forever Summer has lots of veggie recipes. Then there's
Jane Grigson's classic book on vegetables.

I suspect noen of tehse titels are exclusively vegetarian, though.
