Don't know any European but Maddhur Jaffrey's "World Vegetarian" would
cover that ground. She's a really good cook and author, very
recommendable. Also has a book about Asian vegetarian cooking (I
forget the exact title) that includes India, Japan, China, Thailand and
I think also some Middle Eastern. -aem
