Madre is Italian for Mother.

This is just another name for Barm or Sourdough.

You're answering your own question really. There's nothing particular
about having an Italian one. Though I've got three if you really want
Italian. But believe me they really don't have anything about them that
could be considered 'Italian' other than their origin.
