Because the bread is cooked without toppings, so essentially, you are
making bread and then topping the bread. Whereas pizza dough is topped
and then baked and all is cooked together.

I think he is correct. It also does not taste quite the same - even
forgetting about the flavor imparted by the grill. But I do like it!
