Chocolate Salami. adapted from the Settlement Cook Book
1/2 lb fine bittersweet chocolate
1 large egg, unbeaten
1/2 cup almonds, blanched and sliced, may be lightly toasted
1/2 cup finely diced candied orange peel
Unsalted butter for greasing plate
Granulated sugar for coating
Break chocolate into small pieces and melt in top of a double boiler.
Remove pot from the heat and stir the egg into the melted chocolate,
stirring until smooth.
Stir in the almonds and the orange peel.
Pile on buttered plate to cool.
When the mixture is cool, form it into three sausages, each 1 1/2 inches
thick. Roll the sausages in the granulated sugar and let them rest
until firm. Slice into desired thickness, as you would a real salami.
Put each slice into a paper candy cup.
