Tim, I'd advise going back to square 1. if you want sour definately
leave out the honey and I'd also postpone adding any olive oil at this
stage. Just go with the basics - culture, flour, water, salt. Bake a
few loaves (without the bread machine - use that later) and get a feel
for it. Every loaf is an adventure...
