2 tablespoon minced onion
1/2 cup bread crumbs
2 egg whites
1/2 cup skim milk
2 cups flaked canned salmon - (15 oz can)
2 tablespoon chopped parsley
4 tablespoon fat-free mayonnaise
Preheat oven to 450 degrees. Spray a baking sheet generously with
non-stick spray.
In a large bowl combine all ingredients except salmon and mayonnaise.
Mix in the salmon, shape into 4 balls and flatten. Place patties onto
the baking sheet and bake for 5 minutes, turn patties over and bake
another 5 to 8 minutes, or until crisp and slightly browned. Serve
topped with a tablespoon of the mayonnaise.
This recipe yields 4 patties.
Comments: To modify the topping you may add dill and/or lemon juice to
the fat-free mayonnaise.

1 can salmon --drained
1/2 cup bread crumbs --more or less
1 egg
1/2 onion --chopped
Chopped fresh parsley
Salt --to taste
Freshly-ground black pepper --to taste
Oil --for frying
In a bowl, combine salmon (you can even add the soft bones; they're
nutritious); enough bread crumbs to hold everything together; egg;
onion; parsley; and salt and pepper to taste. Mix well.
Form patties and saute them in a small amount of oil on both sides.
Serve with the condiment of your choice, such as mango chutney,
mayonnaise or plum sauce. If you keep a can of salmon in your pantry,
you'll always have something to cook.

1 can salmon - (16 oz)
1/2 cup crushed soda crackers
2 egg whites
1 tablespoon skim milk
1/8 teaspoon freshly-ground black pepper
1/4 cup chopped green pepper
1/4 teaspoon dill
4 tablespoon fat-free mayonnaise
Start grill/light coals. Adjust the grate to be about 4 to 6 inches
above the coals. Spray the top of a broiler pan generously with
non-stick spray.
In a large bowl, combine all ingredients except salmon, dill and
mayonnaise. Mix in the salmon; shape into 4 balls and flatten. Place
patties on the broiler pan. When the grill is ready/coals are white,
place the broiler pan on the grate. Grill the patties until they are
crisp and slightly browned. Remove to warmed plates. Top with
mayonnaise and sprinkle with dill. (Note: Instead of mayonnaise, you
may also serve with a chunky vegetable salsa -- will not significantly
change nutritional values.)
This recipe yields 4 patties.

2 Navel oranges
1 medium Onion
15 1/2 ounces Salmon - --1 can
1/2 cup Bread crumbs
2 teaspoons Worcestershire sauce
Salt --to taste
Black pepper --freshly ground to taste
2 tablespoon Vegetable oil
=== Orange Sauce ===
1/4 cup Plain yogurt
6 tablespoon Frozen reconstituted orange juice
Peel and seed oranges and cut into small pieces. Chop onion
medium-fine. Drain salmon. Combine all the ingredients except for the
oil and mix well. Shape into 8 patties. Heat oil in a large skillet.
Saute patties in hot oil over medium heat until golden brown on one
side. Turn and brown on second side. Serve with Orange Sauce. Orange
Sauce: Combine ingredients and mix until smooth. Serve at room
temperature or warmed slightly. This recipe serves 8.
