Teflon. Applied using a 2-step process to make it stick
to the pan better, and to make it bumpy so it sticks to
the food less, than a flat coating of Teflon. But it's
still teflon.
I still won't use metal utensils in mine.
And the only time I ever got a teflon pan hot enough to
react with anything, the coating melted and I threw it out.
