I hear that! I tried making a maple fondant out of maple syrup once
for my Christmas Candy. It turned out really weird, not at all like a
fondant I made from sucrose. It was firm at first, but after dipping,
the dipped pieces kinda flattened out into these weird little
chocolate covered maple cream candies.

Man, were they delicious! Nothing but real maple syrup inside!
Mmmmmmmm!

Real maple syrup is the thing. Artificial maple pales in comparison.
