Maple Syrup

I've had syrup go moldy in the can (I buy a gallon at a time) but
rarely. Mold is no problem, though. It is only on the surface and is
easily filtered out through using a few layers of cheesecloth. Then
rinse the can well, bring the syrup briefly to a boil and put it back
into the container.
