Default what's fermenting?

I've had a big winemaking session in the last three days and just
started:

Coffee
Gooseberry
Rose (blossom)

Wines clarifying/maturing are numerous: raspberry, blackcurrant,
elderflower blends, red/black berry blend, hawthorn blossom,
cranberry, elderberries.
