I'm still learning that concept. ;-) I still tend to cook at a set
temperature at so many minutes per lb. The fun part is controlling the
temp in the BBQ/Smoker! I'm finishing up some chicken and sweetbreads
right now and last I checked, the temp is holding at right around 300
degrees F. I've got my timer set. <g>

Nice new toys BTW. Good luck with them! I just bought a new crock pot.
I've not owned nor used one since I was a senior in college. I've got
turkey and veggie soup cooking in there right now and just pulled a ham
out of the smoker so all that along with the other meat I'm smoking
should last all week. I'll just have to prep salad and steamed
veggies...
