I would try to modify an existing bran muffin recipe by reducing
the oil by 1/2 or 3/4 and adding an equivalent amount of applesauce to
the mixture for moisture. A quarter cup of oil divided into 8 or 12
muffins or more doesn't add much fat per muffin.
