Chewy Lemon Cookies

1 lemon cake mix
2 cups whipped topping
2 eggs
Powdered sugar

Mix together cake mix, whipped topping, and eggs.
Refrigerate 2 hours.
Preheat oven to 350 degrees F.
Lightly grease a cookie pan. Roll cookie dough into small balls, then roll
balls in powdered sugar.
Space balls evenly on cookie sheet.
Bake 6-8 minutes. Remove from pan and cool.

Chocolate Cinnamon Chewies

1 package plain devil's food cake mix -- (18.25 ounces)
1/3 cup water
1/4 cup butter -- melted
1 egg
1 2/3 cups cinnamon chips
1/2 cup chopped walnuts or pecans

Heat oven to 3500 F. Grease cookie sheet with solid vegetable shortening.
Place the dry cake mix, water, melted butter and egg in large bowl. Blend
with electric mixer on low speed for 1 minute. Increase speed to medium;
beat for 1 minute (dough will be thick). Stir in cinnamon chips and nuts.
Drop scant teaspoons of dough on cookie sheet.
Bake 7 to 8 minutes or until set. Let stand on cookie sheet 3 minutes;
remove from cookie sheet to wire rack. Cool completely. About 7 dozen
cookies.
Cinnamon Drizzled Cookies: Use 1 cup cinnamon chips in cookie batter.
Bake and cool as directed.
Place remaining 2/3 cup cinnamon chips and 1-1/2 teaspoons shortening (NOT
butter, margarine, oil or spread) in small microwave-safe bowl. Microwave
at
HIGH (100%) 30 seconds or just until chips are melted when stirred.
Drizzle
over cookies.

Chunky Oatmeal Macadamia Cookies

1 package yellow cake mix
1 cup all-purpose flour
3/4 cup butter -- melted
2 eggs
1 teaspoon vanilla
1 cup quick-cooking oats -- or instant
1 cup chopped macadamia nuts
1 cup white chocolate baking chips

Heat oven to 375 degrees. grease baking sheets.
Place cake mix, flour, melted butter, eggs and vanilla in large mixing
bowl.
Beat on low speed for 1 minute. Stop and scrape down sides of bowl.
Increase
speed to medium. Beat 1 minute; dough will be thick. Fold in oatmeal, nuts
and chips.
Drop by heaping teaspoonfuls, 2" apart, onto prepared pans.
Bake for 12-14 minutes or until edges are golden brown. Cool cookies on
baking sheets on wire rack for 1 minute. Transfer cookies to wire rack to
cool completely.

Devil's Food Cookies

1 package devil's food cake mix
2 eggs
1/4 cup hot coffee OR hot water
1/2 cup vegetable oil
2 tablespoons flour
1 cup semisweet chocolate chips
1 cup chopped pecans
3/4 cup bits of chocolate toffee candy

Heat oven to 350 degrees.
Combine cake mix, eggs, coffee, oil and flour in large bowl. Beat on low
speed until all ingredients are moistened, then beat on high speed for 2
minutes. Dough will be sticky.
Fold in chocolate pieces, pecans and candy until evenly distributed. Using
about half of the batter, drop by heaping tablespoonfuls onto ungreased
baking sheet, spacing 2" apart.
Bake for 12-14 minutes. Let the cookies cool on the baking sheet on a wire
rack for 4-5 minutes or until firm. With a metal spatula, transfer the
cookies to a wire rack to cool. Repeat with the remaining batter. Serve
slightly warm or store in an airtight container for up to 2 weeks.

Easy Lemon Sugar Snaps

1 package lemon cake mix -- (18 1/4 ounces)
1 cup yellow cornmeal
2 tablespoons finely shredded lemon peel

Heat oven to 375:.
In a large mixing bowl beat butter and egg with an electric mixer on
medium
to high speed for 30 seconds. Gradually beat in cake mix until combined.
Stir in cornmeal and lemon peed.
Using 1 tablespoon of dough for each cookie, roll into 1" balls. Roll in
sugar.
Place 2" apart on ungreased cookie sheets.
Bake for 9-10 minutes or until bottoms are lightly browned. Let cool on
cookie sheet for 1 minute. Transfer to wire rack. Cool completely.

1 cup creamy peanut butter

Preheat oven to 350 degrees F.
Pour the cake mix into a large bowl. Make a well in the center, and add
peanut butter, oil, eggs and water.
Mix until well blended.
Drop by teaspoonfuls onto ungreased cookie sheets.
Flatten them slightly using a fork dipped in water.
Bake for 10 to 12 minutes in the preheated oven.
Let cookies set on cookie sheet for 2 to 3 minutes before carefully
removing
from cookie sheet to cool on wire racks.

1 package yellow cake mix
1 cup quick-cooking oats
6 tablespoons unsweetened applesauce
egg substitute equivalent to 1 egg
2 tablespoons margarine -- softened
1/2 teaspoon apple pie spice
1/2 cup raisins

In mixing bowl, combine the first six ingredients. Beat until blended.
Stir in raisins. Drop by tablespoonfuls 2" apart onto baking sheets coated
with nonstick cooking spray. Bake at 375 degrees for 10-12 minutes or
until edges are lightly browned. Cool for 5 minutes before removing to
wire rack to cool completely.
