Benna di Vino Winemaking Instructions:


1. Remove juice bladder from white bucket by
breaking the safety seal.


DO NOT DISCARD WHITE BUCKET.


2. Attach the provided spigot (tap) to the
pre-drilled primary fermenter.


a) Unscrew the spigot nut from spigot.


b) Insert spigot through the pre-drilled hole.


c) Re-attach spigot nut to the spigot threads inside
the bucket and tighten securely.


d) Test for possible leakage by first filling the
bucket with water.


e) Drain and continue if no leaks are present.


3. Pry cap from juice bladder and gently pour juice
into primary fermenter.


DO NOT ADD WATER.


4. Stir in Yeast Nutrient and gently sprinkle Yeast
on top of Juice.


5. Place the supplied lid onto the primary fermenter
tightly.


NOTE: The provided lid has a small hole in it: this
acts as an air lock allowing gases to escape.


6. Place in a warm area (78fF) to ferment. Your
kitchen is highly recommended.


It takes approximately 14 days to ferment wine
depending on room temperature. After 14 days, your fermented wine should
have neither foam nor signs of fermenting.


7. Place your fermented wine in the fridge to cold
stabilize for 5 days or longer.


8. After 5 days, remove bucket from fridge and rack
(transfer) the wine from the primary fermenter to the white bucket by using
the spigot (tap) to dispense the wine.


9. Rinse out sediment from the primary fermenter
with hot water.


10. Pour the finished wine back into the primary
fermenter and return to fridge.


11. Continue the racking (transferring) and
refrigeration process until your wine is clear.

(Usually 1-2 times is adequate to clear your wine.)


NOTE: If your wine is not clear after several cold
stabilizations, check your fridge temperatures. Make sure temperature is
below 40fF.


Congratulations! Your wine is now ready to drink!

NOTE: Wine is not recommended for aging. It is
blended to drink immediately. You may either transfer the wine into bottles,
or pour it directly from the portable bucket. Enjoy!


(Yields approximately five 750 ml. bottles.)
