Of course... anything can be frozen, even shit.

The question is *should* you freeze brie. And then the answer is "not really",
upon thawing the cheese will still be perfectly edible but its texture will
suffer severely.

Yes. There's a little cheese factory not far from where I live. They
sell their version of Brie, and it is very good. However, sometimes they
came in underweight, and so they would sell those cheap. The cheese
doesn't have a long life, and sometimes they would get too many at once.
They freeze these and sell them frozen even cheaper in three packs. Of
course these are not a regular item, but they are a great deal. I would
defrost these in the microwave (carefully). They didn't taste any
different than the fresh.

I've tried and haven't had any success at all. It just doesn't
unfreeze well and loses that freshness that is all about bries and
camemberts.
Maybe some ele has had better luck.

Katra is right it is better with age, although it can get alittle strong
after two or three weeks at room temperature. As for freezing, if you are
going to use it for cooking, fine, if you are going to just eat it, I
wouldn't. BTW IMO there is no reason that Brie should last long enough to
worry about it :-)

I actually refrigerate it, but I seldom buy it until I am planning on
eating it. Either for the holiday tables, or just because I feel like
eating a wedge of brie. <G> It's usually not around much longer than 2 weeks.
