I have two fifty gallon drums of wine, one batch is Leon Millot & the
other is Marechal Foch. The wines are really clear, a little on the dry
side. This being my first time with Oak Barrels what am I looking for and
how long would I leave it the barrels . I guess what am I suppose be looking
for ??

if you have plenty of spare time, a year or two or 3 you would not be
disappointed....longer the better if you can stand to wait....I can taste it
all the way down here in ./TX. I left a strawberry for 8 months in a 5 gal
oak , people said it would not be worth drinking,,,,,,as usual, most people
or either stupid or don't know what they are talking about......time in a
cask makes any wine better....Donny

When it tastes good, bottle it.
