Looking in the archives I found that some people oak elderberry wines.
I did not find much information as to how much though. Anyone with experience with this? I have medium and light toast chips in both french and american oak? Any thoughts? |

Hi Droopy:
Did the same search and question a few months ago. Same response. Since elderberry requires more time than other wines to mature, I decided to let it go through this winter. Let it drop whatever crystals if any, clear up and then taste and oak if it'll add something interesting to the wine. The reason I'm waiting is the 'woody' taste you probably read about in the archives did show post fermentaion. At least it did in my wine. At that point I didn't think oak would add any useful complexity. This is my first batch of elderberry BTW. In fact i think this wine I am making this year may be exceptional as far as clean flavors and grape wine like flavor. I was quie surprised. There is some of the green resin that yout hear about though...and I think you can take it somewhat...but it is minor and it is diminishing. |

Yup I agree. There so much /legend/ around elderberry wine, had to make it. It does seem like it will make a nice wine. Time will tell!
