Default Apple wine acidity - advice please

Just brought in a bag or two of apples from the front yard. One of the
varietites is one of the sweeter 'eating' apples, often not recommended
for apple wine. But, "ya got whats ya got". What I wish to know is the
desired acidity (TA and pH) of apple wine so that I can adjust if taste
dictates.

Anyone have any ranges?
