pinot gris kit not clearing
I have a pinot gris kit that is over a year old. This was a problem
kit in that I sulphited it when it was actually a stuck fermentation. After 3 treatments with hydrogen proxide it finally fermented down to dry. However it will not clear - I've tried a pouch of Isinglass/ Isokleer that came with the kit and followed it up with 5 gms of bentonite properly rehydrated. That's a positive and negative fining but it still has a haze. Any ideas? Don |

I once had a batch of beer that took a lot of time to start fermenting then the fermentation was so slow. I bottle the beer without checking the gravity and after a few weeks, the beer was cloudy and taste hawful. May be you should taste it if you did not. High temperature could be a problem but when I was using wine kits, the wine had no problem to clarify with the bentonite even in summer when the temperature was quite high in a room. Pin |

I would try fining a bottle with Sparkalloid and see if that does the trick. I would think around 1 1/2 grms per gallon would be about my limit, but you could go to 2 grams/gal max in my opinion. I've hit with a positive and negative fining and thought that would clear it up and I didn't think a kit would have a protein problem so I'm really wondering why/what to do. Don |

I recommend it based on positive experiences with this product when others were not so successful. It is positively charged, and as long as you are going to do a trial start with 1 gr. per gal and see if that helps any first. I have only used the "hot mix" version of this which apparently works somewhat better.
