Default pinot gris kit not clearing

I have a pinot gris kit that is over a year old. This was a problem
kit in that I sulphited it when it was actually a stuck fermentation.
After 3 treatments with hydrogen proxide it finally fermented down
to dry. However it will not clear - I've tried a pouch of Isinglass/
Isokleer that came with the kit and followed it up with 5 gms of
bentonite properly rehydrated. That's a positive and negative
fining but it still has a haze. Any ideas?

It could be some kind of infection. I once had a batch of beer that took a
lot of time to start fermenting then the fermentation was so slow. I bottle
the beer without checking the gravity and after a few weeks, the beer was
cloudy and taste hawful. May be you should taste it if you did not. High
temperature could be a problem but when I was using wine kits, the wine had
no problem to clarify with the bentonite even in summer when the temperature
was quite high in a room.

Don,
I would try fining a bottle with Sparkalloid and see if that does the
trick. I would think around 1 1/2 grms per gallon would be about my limit,
but you could go to 2 grams/gal max in my opinion. I normally get away with
1 gr/gal, but it sounds like you have a problem there. HTH

Thanks for the reply John. Why Sparkalloid? I've hit with a positive and
negative fining and thought that would clear it up and I didn't think a
kit would have a protein problem so I'm really wondering why/what to do.

Don,
I recommend it based on positive experiences with this product when
others were not so successful. It is positively charged, and as long as you
are going to do a trial start with 1 gr. per gal and see if that helps any
first. I have only used the "hot mix" version of this which apparently works
somewhat better. HTH
