I have made orange wine for many year trying to get the sweetest fruit
possible. The highest SG usually have been @1036, the result have always been a great wine to, ... cook with. This year I came across an orange tree that have been hit by lighting, now the fruit look just great but taste more like a lemon, but here is the strange part the sugar is 1042! Yes I tried several different fruit and it seems to be from 1038-42, most are over 1040. How is this possible since the fruit taste so sour? SG Brix |
