Roger, not to split hairs, but balance in wine includes acid (and
sugar, and alcohol, and tannin, and glycerol), so if you had to dilute acidity, it wasn't balanced. I make a "pure" blackberry wine too, and I too have to correct for acid. Jack Keller |
