cold filtering a kit....should I ?
 
Hi.....I'm at day 25 of a Vineco Legacy Cab.Sauv. kit.....time to add
isocleer finings ...but I'd rather not add it or the sorbate .....with
my fresh grape wines I have put them in my old fridge downstairs and
they clear just great.....can I do this to a kit wine or is there a
chance that tartaric acid will precipitate out and unbalance the
wine?....sure would clear it nicely though....and I'll be leaving this
wine to bulk age a bit longer before I bottle....Andy J.

Why not just let the wine bulk age and clarify on its own?

BTW, you don't need the sorbate if the wine has gone dry.

You can let it clear on it's own. Just realize that it will take longer.
Give it 9 mo's to a year. If it is dry and you are going to leave it that
way, you do not need the sorbate. Just do not skip the sulfite.
