Default Prune Plums and Port Wine Comments Please

My dear neighbor harvested his prune tree yesterday and gave me about
30 pounds (weighed with pits).

This morning i'm smashing and de-pitting them and eating a few and
thinking port with these plums instead of the Petite Syrah I'd planned
for port wine.

So here's a basic plan for 3 gallons of Prune Plum Port:

25 lbs of Prune Plums
1 lbs golden raisins
Priemer Cuvee

Ferement on skins

Add sugar in stages till alcohol level is as far as yeast will take
it.

Add Everclear to 20% as (if) needed.

Sweeten to taste.

Age and bottle.

Commets please as this will be the first time for a port>

TIA
