PORT ??
 
I got a bottle of Portuguese tawny port as a gift. Once I open it, does it
have to be refrigerated, or just consumed within some reasonable time
period, or can it remain open (corked, of course) for a while like cognac?

A Tawny can last for quite some time, once opened. If I do not plan on
finishing the bottle within a few days, I will stick it into the 'fridge, and
just pour, allowing time for the Port to warm up, before serving.

I suppose that it *could* go bad (really loose its character, not become
deadly), but even with just the two of us, none has stayed around long enough
to test that, especially with refrigeration.

BTW, I really enjoy a Tawny as a dessert wine, as it goes with so many foods,
served at the end of a meal. Vintage Ports usually ARE the dessert, and often
follow a Tawney with everything from nuts to wife's Southern Pecan Pie (Barros
20 yr. is great with that).

PS save the T-stopper, as it can come in handy for capping all sorts of
liquids later.

It'll keep a few months, no problem. You don't have to refrigerate, but a
cool, dark space is fine.
