It's borderline on niacin and zinc, low in vitamin E, and has a poor omega6: omega3 ratio. It also does not provide the full spectrum of phytochemicals. There is nothing purple for anthocyanins and it is low in greens and could be much higher in soluble fibers. Could address all of these problems by substituting dark leafy greens for half of the grains and adding some other colored vegetables and dark blue/purple berries, and specifiying mostly walnuts or hazelnuts for the nuts with 1 T ground flax. |
