Default Mock duck recipe wanted

Hi everyone,

After a recent jaunt to chinatown I find myself with a can of vegan mock
duck, which is basically a tofu thing, I think. Can anyone recommend a
good recipe that I can use it in?

More of a gluten thing -- at least the versions I've seen.

Stir-fried Vegetarian "duck" With Chili, Bell Pepper and Black Beans

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 10 oz. can vegetarian "roast duck" (braised gluten -- mun chai'ya), rinsed, drained, diced
1 tablespoon cornstarch
1 tablespoon oil
VEGETABLES:
1/2 large red bell pepper -- seeded and cut into 1/2" squares
1/2 large green bell pepper -- seeded and cut into 1/2" squares
4 green onions -- cut in 1" lengths
1 tablespoon fermented black beans
2 cloves garlic -- minced
1/4 teaspoon dried red chili flakes
COOKING SAUCE:
1/2 cup vegetarian broth
1 tablespoon dry sherry
1 tablespoon light soy sauce
1 teaspoon light unbleached sugar
1 teaspoon cornstarch -- dissolved in
1 teaspoon cold water

Mix the cubes of "duck" or "oyster sauce"-coated tofu with the cornstarch. Heat
a large wok or heavy skillet over high heat. When hot, add the 1 T. oil. When
the oil is hot, add the "duck" or tofu. Brown in the hot oil. Immediately add
the vegetables (including the garlic, black beans and chili flakes).

Stir-fry for 2 or 3 minutes. Add the Sauce ingredients, EXCEPT for the dissolved
cornstarch. Heat to boiling. Stir in the dissolved cornstarch and stir until
thickened. Serve immediately.

Check the books in the same chinatown. I bought a recipe book that
described how to make the "mock" meats. They were mainly made by
layering tofu "skin" (which can be purchased in the same shops). No
cheaper or more convenient to make it than buy it though. So, in
actual fact, I never got around to making any. Nice read though.

Many of the "mock X" tins that I see are a gluten product, not tofu.
