Default Batata Maqliya ma' Thoom

5 large potatoes
oil for frying
1/2 head of garlic, peeled amd crushed
4 tbsp finely chopped fresh cilantro
salt and pepper to taste
2 tblsp margarine
1 lemon cut into wedges

Peel and dice potatoes into 1/2 inch dice
Place oil in saucepan 2 inches deep and heat. Fry potato cubes until
they barely begin to brown; then drain on paper towels.
Combine remaing ingredients, except margarine and lemon wedges, in a
bowl, then stir in potato cubes.
Melt margarine in frying pan and add potato mixture. Stir fry for
about 3 minutes. Place on a serving platter and garnish with lemon
wedges. Serve hot. Each diner squeezes lemon juice over potatoes.

I think it went back in 2004 or so
