green-apple smell to starter
 
Hi all,

I've got a starter going (since May 2003). I don't use it all the time,
and keep it in the fridge, covered with plastic wrap, stiring every so
often.

Anyways, the last time I used it, I noticed that it had a somewhat
greenapple-like scent. No discoloration. Lots of the hooch on top.

Is this starving, and so that's what is causing the smell? Or is there
something else going wrong? When I refresh it, I usually mix 1 cup water
with 1 cup flour. And add about 1/2 cup thick starter to it (dumping off
the liquid). And the hooch seems to form very quickly.
