Roast Goose Recipe By: Serving Size: 1 Cuisine: Main Ingredient: Categories: U -= Ingredients =- 14 pounds Goose -STUFFING- 2 cups water 1/2 cup Wild rice 1 cup White rice 1/2 cup Onion ; diced 1 can Mandarin oranges 1/2 cup Pine nuts 1 cup Chestnuts ; shelled & quart Optional 1/2 cup Celery ; diced 1/2 Cube of butter 25 Mins/lb) -= Instructions =- Goose- Clean out excess fat (there will be a lot!) and rinse well. Stuff, salt & pepper skin, prick well, & tent w/tin foil. Roast at 375F for 4 hrs. Remove tent & cook 30 mins more. (Approx Stuffing- Cook rices until done. Saute celery & onion in butter. Mix all ingreds & stuff goose.
