Cheesy Potato/Onion Bake
(Here's all you'll need: potatoes, onions, cheese, bacon, & foil) Peel and cut the potatoes and onions in bite size pieces and mix together. Salt and pepper is optional but we love it. Get a big enough piece of heavy duty foil to make a pocket. (While the foil is flat, place your fist in the middle and bring the sides up--leave open.) Now put 1/2 piece bacon in the bottom of the foil and criss cross the other half to form an "X". Put about a cup of your potato/onion mixture on top. Bring all sides of foil together to totally enclose mixture. Place on grill with medium heat for 45 minutes. You'll want to put these on first before later grilling those burgers or whatever! After 45 min. use a pot holder and remove them to a plate or pan where they won't burn anything. Open the foil very carefully because the steam will pour out and can give a nasty burn if not careful. Now dump on top of the potato mixture, 1/2 cup of your favorite cheese. We love extra sharp cheddar! Close the foil back immediately and let sit about 5 min. This way the cheese will be good and melted on top. Now you have no dishes, no mess but all the goodies. = = = = = = = = = = = = = = = = = = = = = = = = = = = = |
