FRESH APPLE CAKE



Grandma Carpenter's Apple Cake



Preheat oven to 300 degrees

Grease 9" x 13" baking pan



2 eggs

2 cups brown sugar

1 cup cooking oil

1 teaspoon vanilla

1 teaspoon cinnamon

1 teaspoon baking soda

2 cups flour

3 cups un-peeled apples cut in small pieces

1 cup coarsely chopped nuts



In a large mixing bowl combine eggs, sugar, oil and vanilla. Mix

well. Measure flour into a small bowl and mix in cinnamon and baking

soda. Dump dry ingredients into egg, sugar, oil mixture and mix until

well blended. Stir in apples and nuts and pour into greased 9" x 13"

pan. Bake at 300 degrees for 1 hour. Serve warm or cold, excellent

with real whipped cream.

Apple Cake



1 egg

2/3 cup (160 ml) milk

1/4 cup (60 ml) melted butter

1 tsp (5 ml) vanilla extract

2 cups (500 ml) flour

1/4 cup (60 ml) sugar

1 tsp (5 ml) baking powder

1/2 tsp (2 ml) salt

4 apples, peeled, cored, and thinly sliced

2 tsp (10 ml) cinnamon mixed with 2 Tbs (30 ml) sugar



Mix the egg, milk, butter, and vanilla together in a small bowl.

Combine the flour, sugar, baking powder, and salt in a mixing bowl and

add the egg mixture. Mix with just a few strokes until combined.

Pour into a greased 9-inch (23 cm) cake pan at least 2 inches (5 cm)

deep. Arrange the apple slices on top of the batter and sprinkle with

the cinnamon sugar. Bake in a preheated 375F (190C) oven for 25 to 30

minutes, until a toothpick inserted in the center comes out clean.

Serve warm or at room temperature. Makes on 9-inch (23 cm) cake to

serve 6 to 8.

FRESH APPLE CAKE



4 cups apples, peeled

3 cups flour

2 cups sugar

2 tsp. baking soda

1 tsp. baking powder

1 tsp. cinnamon

1/2 tsp. nutmeg

1/2 tsp. allspice

1 cup Crisco oil (or other vegetable oil)

2 eggs, beaten well

1/2 cup raisins (if desired) ((I never use

the raisins))

1/2 cup nuts (if desired) ((I use pecans,

but walnuts work wonderfully))



Grate apples and sprinkle with flour, sugar, soda, baking powder, and

spices. Mix well. Pour on oil and eggs and mix till well blended.

Stir in nuts and raisins. Bake in a greased and floured tube, Bundt

or loaf pan at 350 degrees for 45 to 50 minutes. Serves 15 to 30

depending on the width of the slices and which pan you use to bake it

in.
