Noodles With Kielbasa, Cabbage And Caraway Seeds

1 pound wide egg noodles
1 small cabbage
1/2 pound smoked garlic sausage
= (such as kielbasa)
4 tablespoon butter
1 tablespoon caraway seeds
Salt --to taste
Freshly-ground black pepper --to taste

Cook the noodles in a large pot of boiling, salted water until tender
but still firm, 7 to 9 minutes. Drain well.

Meanwhile, quarter the cabbage and cut away the tough core. Shred the
cabbage. Cut the sausage in half lengthwise. Cut each half crosswise
into 1/4-inch slices.

Heat the butter in a large frying pan over medium-high heat until melted
and bubbling but not brown, 1 to 2 minutes. Add the sausage and cook 2
minutes, stirring often, until lightly browned.

Add the cabbage and cook, stirring often, until softened and bright
green, 3 to 4 minutes. Add the caraway seeds and cook 1 minute longer.

Toss the cooked noodles with the cabbage mixture. Add salt to taste and
season generously with pepper.

This recipe yields 4 to 6 servings.
