You really shouldn't hurry a good pizza dough....

Pizza Dough

Dough Recipe
1 pound (or about 3 1/2 cups) high gluten flour
3/4 cup warm water
1 tablespoon vegetable oil
1 1/2 teaspoon active dry yeast
1 1/2 teaspoon sugar
1 teaspoon salt
In a heavy-duty stand mixer (e.g., KitchenAid) fitted with dough hook, add the water, oil, yeast, salt, and sugar. Mix thoroughly until yeast has fully dissolved. Add flour and mix on low speed until all of the flour and water have mixed and a stiff dough ball forms, about 3 to 4 minutes. Stop mixing as soon as the dough ball forms as this type of dough should not be kneaded.

Place the dough ball into a large bowl and cover tightly with plastic wrap. Let the dough rise for 24 hours in the refrigerator before using. Please note that I cannot over-emphasize the importance of a 24-hour rising time since it is absolutely essential for the dough to develop its signature texture and, more importantly, its unique flavor! Do not skip this step!

Just in case you want to make a pizza in about 5 minutes - use a pita bread as a base, load with vegetables (like red pepper, chilli, mushrooms), ham/salami and mozzeralla, grill until cooked and then top with some fresh spinach and herbs and you have a great lunch / easy dinner in minutes!

My Pizza Base Recipe is

2 tsp Dried Yeast
2 tsp Sugar
500g Strong Flower
350ml Tepid Water
2 tsp Salt

Boil kettle and fill jug with 250ml cold water and 100ml from the kettle. Test the water and it should be around body temperature. Mix the yeast, sugar and water together. Cover with a clean cloth and wait 10 minutes for yeast to activate. The yeast will go frothy as it comes alive.

Sift flour and salt into a mixer with a dough hook attachment (you can do this by hand if you wish) . Start the mixer on the lowesr setting and slowly add the yeast and water mixture. No need to change the mixer speed leave it for 10 minutes to mix. If the mixture is a bit wet you can add more flour or more water if to dry – it took me a few goes to get this right.

Cover the bowel with cling film or a clean cloth and leave for a minimum of 1 hour – 2 or 3 is better. If you leave the dough for longer than an hour knock back at the half way point.

Knock the dough back in the bowel and turn onto a floured surface. Divide into 4 and roll into balls. Cover with cloth and leave to 20 to 20 minutes.

Without the luxury of a pizza oven cook the pizzas and the high oven temperature they give. I put my thickest tray at the top of the oven to heat up on the highest temperature then cook the pizza for 15 to 20 minutes depending on thickness and temperature.

Ingredients

* 500g Strong White Bread Flour
* ½ tbsp Sea Salt
* 7g sachet Dried Yeast
* ½ tbsp Golden Caster Sugar
* 2 tbsp Extra virgin Olive Oil
* 325 ml lukewarm Water

Method

* Sieve the flour and salt on to a clean work surface and make a well in the middle. In a jug, mix the yeast, sugar and olive oil into the water and leave for a few minutes, then pour into the well.

Using a fork, bring the flour in gradually from the sides and swirl it into the liquid. Keep mixing, drawing larger amounts of flour in, and when it all starts to come together, work the rest of the flour in with your clean, flour-dusted hands.

Knead until you have a smooth, springy dough.

Place the ball of dough in a large flour-dusted bowl and flour the top of it. Cover the bowl with a damp cloth and place in a warm room for about an hour until the dough has doubled in size.

Now remove the dough to a flour-dusted surface and knead it around a bit to push the air out with your hands. Divide the dough up into as many little balls as you want to make pizza

The base of the pizza is the most important part of the recipe. Once you have that down, it is completely up to you to pick out which toppings you want on it. You can easily find ingredients in your local supermarket so that is easy. Making your homemade pizza is a two step process. First step is making the base, and then second step is adding the toppings on top of it. That is all you need!
Essential ingredients for the base are flour, yeast, water, and sugar. Optional ingredient for the base would be salt. You can always add salt when you are done making your homemade pizza at home.

Hello!

Easy way is to buy a premade crust like Buboli (it also comes with sauce), some mozzarella and pepperoni. If the pizza crust doesn't come with sauce, you can buy premade pizza sauce in the jar or squeeze bottle.

An alternative is to buy english muffins to make mini-pizzas or sandwich rolls to make french bread pizza.

So all you need is a crust, tomato or pizza sauce, cheese and pepperoni.

Pizza Crust

3 tsp. yeast

1½ cups WARM water

3 tbs. olive oil
1 tsp. salt

2½ cups white flour

2 cups whole wheat flour

To make crust, dissolve the yeast into the warm water and add oil and salt to that mixture.

Mix the flours and knead them into the liquid mixture. Let dough rise for 30 to 40 minutes.

Once the dough has risen, divide it in half and roll out two round 12 inch pizza crusts on a clean, floured countertop, using your fingers to roll the perimeter into on outer crust as thick as you like. Using spatulas, slide the crusts onto well floured pans or baking stones and spread toppings.
