I'm looking for a recipe for Panocha, a Spanish brown sugar candy. It's
made with brown sugar, evaporated or condensed milk, and walnuts and I'm
told involves a lot of beating the ingredients by hand to get the right
consistency. This candy is slightly crisp and a little crumbly, with a
melt-in-your-mouth-not-on-your-hands quality. It is not chewy/squishy
like
a brown sugar/walnut fudge would be. It's been a family favorite during
the
holidays for generations. My Tia Blanche had the recipe in her head, and
it
was never written down, only passed to the next generation by hands on
learning. Unfortunately, my aunt had Alzheimer's in her later years and
recently passed away, seemingly taking this family recipe with her. Does
anyone have a recipe for this Spanish candy? Thank you in advance!
