Grilled Chicken And Vegetables With Fresh Basil

1/4 cup chopped shallots
3 tablespoon olive oil
3 garlic cloves ; chopped
1 teaspoon salt
1/2 teaspoon freshly-ground black pepper
4 boneless skinless chicken breast halves ; (abt 1 3/4 lbs)
1 red bell pepper ; seeded, quartered
1 medium zucchini ; quartered lengthwise
1 medium yellow squash ; quartered
lengthwise
1 medium leek ; root trimmed (not
removed), halved lengthwise
1/4 cup coarsely-chopped fresh basil


Mix shallots, olive oil, garlic, salt and pepper in a large resealable
plastic bag. Add chicken, pepper, zucchini, squash and leek. Gently shake
bag to coat chicken and vegetables with marinade. Marinate in
refrigerator,
1 to 3 hours, turning occasionally.

Prepare a medium-low grill. Place chicken and vegetables on the grill.
Grill zucchini, squash and leeks 7 to 9 minutes, or until just tender,
turning occasionally to grill all surfaces. Grill pepper 9 to 11 minutes,
or until tender, turning once. Grill chicken 12 to 14 minutes, or until
just cooked through, turning once.

Transfer chicken and vegetables to a serving platter. Sprinkle with basil
and serve immediately.

This recipe yields 4 servings.






Italian Herb Pork Chops

Serving Size: 4


1/4 cup White wine
3 tablespoon Chopped fresh fennel
Leaves
1 tablespoon Chopped fresh marjoram
1/4 teaspoon Salt
1 Garlic clove ; minced
4 Boneless pork loin chops
about 1 pound
2 tablespoon Chopped fresh basil


In small bowl, combine wine, fennel, marjoram, salt and garlic; blend
well. Spray large nonstick skillet with nonstick cooking spray. Hea t
over medium high heat until hot. Add pork chops; cover and cook 3 minutes.
Turn chops; add wine mixture. Reduce heat to medium; cover and cook an
additional 3 to 7 minutes or until pork is no longer pink in center.
Uncover skillet; cook an additional minute. To serve, spoon wine mixture
over pork. Sprinkle with fresh basil. Makes 4 servings.




Skillet Chicken Alfredo

Serving Size: 4

4 Boneless ; skinless chicken Breast Pounds)
1 Egg ; slightly beaten
1/2 cup Italian seasoned dry bread Crumbs
2 tablespoon Olive or vegetable oil
1 Jar ; 16 ounces Ragu Cheese Creations Sauce
1 small Tomato ; cut into 4 slices
4 sl Mozzarella cheese or 1/2 cup Shredded about Ounces)

Dip chicken in egg, then bread crumbs. In 12 inch nonstick skillet, heat
oil over medium high heat and lightly brown chicken. Remove chicken and
set
aside. In same skillet, stir in Ragu Cheese Creations Sauce and bring to
a boil. Reduce heat to low. Return chicken to skillet; arrange 1 tomato
slice on each chicken breast half. Cover and simmer 5 minutes. Evenly
top chicken with cheese and simmer covered an additional 2 minutes or
until
chicken is no longer pink. Serve, if desired, over hot cooked pasta and
garnish with chopped fresh basil or parsley. Makes 4 servings. F



Basil Grilled Chicken

Serving Size: 4

3/4 teaspoon Pepper ; coarsely ground
4 Chicken Breast Halves Without Skin
1/3 cup reduced-calorie margarine ; melted
1/4 cup Fresh Basil ; chopped
1 tablespoon parmesan cheese ; grated
1/4 teaspoon Garlic Powder
1/8 teaspoon Salt
1/8 teaspoon Pepper
Fresh

Press 3/4 tsp pepper into meaty sides of chicken breast halves. Combine
the melted butter & chopped basil, stir well. Brush chicken lightly with
melted butter mixture. Combine softened butter, the 2 Tbsp basil,
Parmesan cheese, garlic powder, salt and pepper in a sm bowl. Beat at low
speed w/electric mixer until mixture is well blended and smoth. Transfer
to a sm serving bowl; set aside. Grill chicken over med coals 8 - 10 min
on each side, basting frequently w/remaining mixture. Garnish w/fresh
basil sprigs, if desired
