Mom's Banana Bread

1 cup sugar
1/4 cup light butter, softened
1 2/3 cups mashed ripe banana (about 3 bananas)
1/4 cup skim milk
1/4 cup low-fat sour cream
2 large egg whites
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Cooking spray

Preheat oven to 350 . Combine sugar and butter in a bowl; beat at medium
speed of a mixer until well-blended. Add banana, milk, sour cream, and egg
whites; beat well, and set aside. Combine flour, baking soda, and salt;
stir well. Add dry ingredients to creamed mixture, beating until blended.
Spoon batter into 4 (5 x 2 1/2-inch) miniature loaf pans coated with
cooking spray. Bake at 350 for 45 minutes or until a wooden pick inserted
in center comes out clean. Let cool in pans 10 minutes on a wire rack;
remove from pans. Let cool completely on wire racks. Note: To make one
9-inch loaf, spoon batter into a 9 x 5-inch loaf pan coated with cooking
spray; bake at 350 for 1 hour and 10 minutes. Yield: 1 loaf, 20 servings
(serving size: 1 slice). Yield: 4 loaves, 4 servings per loaf (serving
size: 1 slice)

Banana Bread

1/2 cup softened butter or margarine
1 cup granulated sugar
2 eggs
1 cup mashed ripe bananas (3 medium)
2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup chopped walnuts

Cream butter and sugar together. Add one egg at a time, beating till
smooth. Blend in mashed bananas. In second bowl, stir flour with baking
soda, baking powder, salt and nuts. Add to banana mixture stirring only to
moisten. Transfer to greased loaf pan. Bake in 350 deg. F. oven for about
1 hour until inserted toothpick comes out clean. Let stand 10 minutes.
Remove from pan and place on cake rack to cool. Wrap to store. This banana
bread recipe makes 1 loaf.



Banana Coconut Bread

2 eggs
1 cup sugar
1/2 cup melted butter or margarine
1 cup mashed ripe bananas (3 medium)
1/2 teaspoon almond flavoring
1 1/2 cups flour
1/2 cup medium coconut
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts
1/2 cup maraschino cherries

Break eggs into a mixing bowl and beat until light and frothy. Add sugar
and melted butter. Beat well. Stir in mashed banana and almond flavoring.
Measure remaining ingredients into another bowl and stir until well mixed.
Pour over batter and stir just to combine. Place into greased loaf pan.
Bake in 350 deg. F. oven for 1 hour until toothpick inserted in the center
comes out clean. Let stand for 10 minutes. Remove from pan and let cool.



Banana-Pineapple Bread

1 cup chopped nuts
2-1/2 cups sugar
5 cups flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon cinnamon
1-1/2 cups vegetable oil
3 eggs
3 bananas, mashed
1 teaspoon lemon juice
1 can crushed pineapple, drained

Mix together dry ingredients. Mix together liquid ingredients, combine.
Bake at 350 degrees for 1 hour.




Apple Banana Bread

1/2 cup butter, softened
2 cups flour
1/2 cup brown sugar
1 teaspoon baking powder
1/2 cup sugar
1 teaspoon baking Soda
2 extra large eggs
1/2 teaspoon cinnamon
3 tablespoon sour cream
2 extra large apples, cored and chopped
1 extra large banana, mashed
1/2 cup chopped walnuts
m.. 1 teaspoon vanilla
Preheat oven to 350 deg F.

Cream butter and sugars, and beat in eggs. Stir in sour cream, banana and
vanilla. In separate bowl, combine flour, baking powder, soda and
cinnamon. Gradually add to butter mixture. Gently stir in apples and
nuts. Spoon into greased bread pan and bake 1 hour.




Chocolate Chip Banana Bread

3/4 cup granulated sugar
1 1/2 cups mashed bananas
3/4 cup vegetable oil
2 large eggs
2 cups all-purpose flour
1 cup semisweet chocolate chips
2 teaspoons vanilla extract
1/2 teaspoon baking powder
1/2 teaspoon salt

Mix all ingredients together except chocolate chips. Mix well with wooden
spoon. Add chocolate chips to the banana bread batter and mix well. Pour
batter into greased and floured loaf pan. Cover loosely with a tent of
aluminum foil. Bake at 325 for 30 minutes. Remove foil and continue baking
for 40 minutes or until wooden pick inserted tests done. Cool for 10
minutes, remove from pan and cool banana bread completely before slicing.



Peanut Butter Bread

1 3/4 cups sifted flour
2 teaspoons baking powder
1/4 teaspoon soda
1/2 teaspoon salt
1/3 cup shortening
3/4 cup crunchy peanut butter
2/3 cup sugar
2 eggs, slightly beaten
1 cup mashed bananas

Sift together first 4 ingredients and set aside. Cream shortening and
peanut butter, adding sugar and eggs. Alternately add dry ingredients and
bananas, but do not beat. Pour batter in well-greased loaf pans and bake
at 350 degrees for 1 hour.



Banana Pumpkin Bread

2 ripe bananas, mashed
2 eggs
1/3 cup vegetable oil
1 1/3 cups canned pumpkin puree
1/2 cup honey
1/2 cup white sugar
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons pumpkin pie spice
1 teaspoon ground cinnamon
3/4 cup raisins (optional)

Preheat oven to 350 degrees F (175 degrees C). Grease an 9x5 inch loaf
pan. In a large bowl, stir together the mashed banana, eggs, oil, pumpkin,
honey and sugar. Combine the flour, baking powder, baking soda, salt, pie
spice and cinnamon, stir into the banana mixture until just combined. Fold
in the raisins and walnuts if desired. Pour batter into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 45 minutes, or until a toothpick
inserted into the center of the loaf comes out clean. Cool loaf in the pan
for 10 minutes before moving to a wire rack to cool completely.
