Mom's Banana Bread 1 cup sugar 1/4 cup light butter, softened 1 2/3 cups mashed ripe banana (about 3 bananas) 1/4 cup skim milk 1/4 cup low-fat sour cream 2 large egg whites 2 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt Cooking spray Preheat oven to 350 . Combine sugar and butter in a bowl; beat at medium speed of a mixer until well-blended. Add banana, milk, sour cream, and egg whites; beat well, and set aside. Combine flour, baking soda, and salt; stir well. Add dry ingredients to creamed mixture, beating until blended. Spoon batter into 4 (5 x 2 1/2-inch) miniature loaf pans coated with cooking spray. Bake at 350 for 45 minutes or until a wooden pick inserted in center comes out clean. Let cool in pans 10 minutes on a wire rack; remove from pans. Let cool completely on wire racks. Note: To make one 9-inch loaf, spoon batter into a 9 x 5-inch loaf pan coated with cooking spray; bake at 350 for 1 hour and 10 minutes. Yield: 1 loaf, 20 servings (serving size: 1 slice). Banana-Pineapple Bread 1 cup chopped nuts 2-1/2 cups sugar 5 cups flour 1 teaspoon salt 1 teaspoon baking powder 1 teaspoon cinnamon 1-1/2 cups vegetable oil 3 eggs 3 bananas, mashed 1 teaspoon lemon juice 1 can crushed pineapple, drained Mix together dry ingredients. Mix together liquid ingredients, combine. Bake at 350 degrees for 1 hour. Chocolate Chip Banana Bread 3/4 cup granulated sugar 1 1/2 cups mashed bananas 3/4 cup vegetable oil 2 large eggs 2 cups all-purpose flour 1 cup semisweet chocolate chips 2 teaspoons vanilla extract 1/2 teaspoon baking powder 1/2 teaspoon salt Mix all ingredients together except chocolate chips. Mix well with wooden spoon. Add chocolate chips to the banana bread batter and mix well. Pour batter into greased and floured loaf pan. Cover loosely with a tent of aluminum foil. Bake at 325 for 30 minutes. Remove foil and continue baking for 40 minutes or until wooden pick inserted tests done. Cool for 10 minutes, remove from pan and cool banana bread completely before slicing. Peanut Butter Bread 1 3/4 cups sifted flour 2 teaspoons baking powder 1/4 teaspoon soda 1/2 teaspoon salt 1/3 cup shortening 3/4 cup crunchy peanut butter 2/3 cup sugar 2 eggs, slightly beaten 1 cup mashed bananas Sift together first 4 ingredients and set aside. Cream shortening and peanut butter, adding sugar and eggs. Alternately add dry ingredients and bananas, but do not beat. Pour batter in well-greased loaf pans and bake at 350 degrees for 1 hour. Banana Pumpkin Bread 2 ripe bananas, mashed 2 eggs 1/3 cup vegetable oil 1 1/3 cups canned pumpkin puree 1/2 cup honey 1/2 cup white sugar 2 1/2 cups all-purpose flour 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 2 teaspoons pumpkin pie spice 1 teaspoon ground cinnamon 3/4 cup raisins (optional) Preheat oven to 350 degrees F (175 degrees C). Grease an 9x5 inch loaf pan. In a large bowl, stir together the mashed banana, eggs, oil, pumpkin, honey and sugar. Combine the flour, baking powder, baking soda, salt, pie spice and cinnamon, stir into the banana mixture until just combined. Fold in the raisins and walnuts if desired. Pour batter into the prepared pan. Bake at 350 degrees F (175 degrees C) for 45 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
