Cranberry Bread

2 cups cranberries -- fresh or frozen
1 2/3 cups sugar
2/3 cup vegetable oil
1/2 cup milk
2 teaspoons grated orange peel
2 teaspoons vanilla
4 eggs
3 cups flour
1/2 cup walnuts or pecans -- coarsely chopped
4 teaspoons baking powder
1 teaspoon salt

Oven 350 degrees. Grease bottoms only of 2 loaf pans, 8 1/2 x 4 1/2 x 2
1/2
or 9 x 5 x 3".
Mix cranberries, sugar, oil, milk, orange peel, vanilla and eggs in large
bowl. Stir in remaining ingredients.
Pour into pans.
Bake 50-60 minutes or until toothpick inserted in center comes out clean.
Cool 10 minutes.
Loosen sides of loaves from pans. Remove from pans. Cool completely on
wire
rack before slicing.
Store tightly wrapped in refrigerator up to 1 week.

Cranberry Chip Cookies

1/2 cup butter or margarine -- softened
1/2 cup shortening
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semisweet chocolate chips
1 cup vanilla chips
1 cup dried cranberries
1 cup chopped pecans

In a mixing bowl, cream butter, shortening and sugars. Add eggs, one at a
time, beating well after each addition. Beat in vanilla.
Combine flour, baking soda and salt. Gradually add to creamed mixture.
Stir
in the chips, cranberries and nuts.
Drop by tablespoonfuls 2" apart onto ungreased cookie sheets.
Bake at 375 degrees for 9-11 minutes or until golden brown.
Cool for 2 minutes before removing to wire racks to cool completely.

Cranberry Decadent Cookies

1/4 cup all-purpose flour
1/4 cup cocoa powder
1 teaspoon cinnamon
1/8 teaspoon baking powder
6 tablespoons butter -- softened
1/2 cup sugar
2 large eggs
8 ounces semi-sweet chocolate -- chopped
2 cups white chocolate chips -- divided
1 cup dried cranberries
1 pinch salt

Preheat oven to 350: F. Grease large cookie sheets.
Melt semi-sweet chocolate over low heat in the top of a double boiler or
in
the microwave (at 50% power) and cool. Combine dry ingredients: flour,
cocoa, cinnamon, baking powder and salt. In a large bowl, cream butter.
Add sugar and beat until light and fluffy. Add eggs and beat until smooth.
Stir in melted chocolate.
Add dry ingredients and mix well.
Fold in 1 cup white chocolate chips and the dried cranberries.
If dough feels very soft or wet, chill for 10 minutes.
Drop by teaspoons on to greased cookie sheets.
Bake until cookies look dry and cracked but still feel soft when pressed
lightly, about 8 minutes. Remove from oven and let stand on sheets 3
minutes. Remove to rack and let cool completely.
Place 1 cup white chocolate chips in a microwaveable bowl. Microwave on
medium (50%) power for 30 seconds. Stir.
Continue microwaving for 10 seconds and stir again. Repeat just until
white
chocolate is melted. Scrape melted white chocolate into a Ziploc baggie.
With a sharp scissors, snip off a very small corner of the baggie.
Drizzle top of cookies with zig-zags of melted white chocolate. Cool until
chocolate is set.

Cranberry Salad

quart Cool Whip. -- thawed

Mix cranberries and sugar. Let stand 2 hours.
Mix marshmallows and Cool Whip. Let stand 2 hours.
Mix cranberries and marshmallow mixtures together with pineapple. Set
overnight.

1 cup all-purpose flour
1 cup sifted cake flour
2/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons chilled stick margarine
cut into small pieces
3/4 cup frozen cranberries -- thawed and halved
2 teaspoons grated orange rind
3/4 cup plain nonfat yogurt
Vegetable cooking spray
2 teaspoons sugar

Combine first 6 ingredients in a bowl. Cut in margarine with a pastry
blender or 2 knives until mixture resembles coarse meal. Add cranberries
and orange rind. Toss well. Add yogurt, stirring just until dry
ingredients are moistened (dough will be sticky). Turn the dough out onto
a lightly floured surface, and with floured hands, knead 4 or 5 times. Pat
dough into an 8-inch circle on a baking sheet coated with cooking spray.
Cut dough into 12 wedges (do not separate the wedges). Sprinkle 2
teaspoons sugar over the dough. Bake at 450 degrees for 12 minutes or
until golden.

Holiday Morning French Toast

1 cup brown sugar
1/2 cup butter -- melted
3 teaspoons ground cinnamon -- divided
3 tart apples (such as Granny Smith) -- peeled and
sliced
1/2 cup dried cranberries or raisins
1 loaf Italian or French bread -- cut into 1" slices
6 large eggs
1 1/2 cups milk
1 tablespoon vanilla extract

Combine brown sugar, butter and 1 teaspoon cinnamon in a 13x9" baking pan.
Add apples and cranberries. Toss to coat well. Spread apple mixture evenly
over pan bottom. Arrange slices of bread on top. Mix eggs, milk, vanilla
and remaining 2 teaspoons cinnamon until well blended. Pour mixture over
bread, soaking bread completely. Cover and refrigerate 4-24 hours. Bake,
covered with foil in a preheated 375 degree oven for 40 minutes. Uncover
and bake 5 minutes. Remove from oven. Let stand 5 minutes. Serve warm.

Toffee Cranberry Crisps

3/4 cup sugar
3/4 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 1/2 cups quick-cooking oats
1 teaspoon baking soda
1/4 teaspoon salt
1 cup dried cranberries
1 cup miniature semisweet chocolate chips
1 cup English toffee bits

In a mixing bowl, cream butter and sugars. Beat in eggs and vanilla.
Combine flour, oats, baking soda and salt. Gradually add to creamed
mixture.
Stir in cranberries, chocolate chips and toffee bits.
Shape into three 12" rolls. wrap each in plastic wrap. Refrigerate for 2
hours or until firm. Unwrap and cut into 1/2" slices.
Place 2" apart on ungreased cookie sheets.
Bake at 350 degrees for 8-10 minutes or until golden brown. Remove to wire
racks to cool.

White Chocolate Cranberry Bars

2 1/4 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2/3 cup firmly packed brown sugar
1/2 cup sugar
1/2 cup unsalted or regular butter -- softened
2 eggs
2 teaspoons vanilla
1 cup coarsely chopped fresh or frozen
cranberries
1 cup chopped walnuts
12 ounces white vanilla chips
1 tablespoon shortening

Heat oven to 350 degrees. Grease 13x9" baking pan. In large bowl, combine
flour, baking powder, baking soda and salt. Mix well. In another large
bowl, combine brown sugar, sugar and butter. Beat until light and fluffy.
Add eggs 1 at a time, beating well after each addition. Add vanilla. Blend
well. Gradually add flour mixture. Blend at low speed just until combined.
Fold in cranberries, walnuts and 1 1/2 cup vanilla chips. (Reserved
remaining chips for topping.) Spread batter in greased pan. Bake 350
degrees for 30-40 minutes, until golden brown. In small saucepan, over low
heat, melt reserved 1/2 cup vanilla chips and shortening, stirring
occasionally. Drizzle over warm bars. Cool 1 hour or until completely
cooled. Cut into bars.
