Default Wilted Spinach Salad

Wilted Spinach Salad

1/2 lb bacon
1/4 cup granulated sugar
2 Tbsps cider vinegar
pinch salt
2 Tbsps water
8 cup spinach -- torn into bite sized pieces
Sliced fresh mushrooms, to taste
Thinly sliced red onion, to taste

Cook bacon in skillet until crisp and remove from heat. Remove bacon, but leave
the fat in the pan. Whisk together sugar, vinegar, salt and water until sugar is
dissolved. Add half of the mixture to the bacon fat and heat, stirring constantly.
Do not allow to boil. Toss greens, mushrooms, onion slices and bacon with the
remaining vinegar mixture, add the hot dressing and toss to combine. Makes about 6
10 servings, depending on how much people eat
