Carrot Jam ( Marmalade?)
2 Lb. carrots 4 Lemons 2 cups water Sugar Peel the carrots, run them through a GRINDER ( not shredder) on fine disk,Wash the Lemons, quarter them and grind them also skin and all, Place in a large kettle, add the water and boil for 30 minutes, Measure the carrot,water,lemon mix by cups, Pour this back into kettlr and add an equal amount of sugar to this, Boil until thick, 2 to 3 hrs.
