Default Liver and Bacon Pie

Liver and Bacon Pie

Serves 4

1/2 lb. bacon
1/2 lb. calf or lamb liver
4 onions, sliced
1 1/2 lb. potatoes, peeled and sliced
1 tsp. dried sage
salt and pepper
beef stock
butter or margarine

Cut the bacon and liver into small pieces. Grease a casserole and place a
layer of potatoes on the bottom, then a layer of onions and a layer of
bacon and liver. Sprinkle the meat with sage, salt and pepper. Continue
until all the ingredients are used, ending with a layer of potatoes. Pour
in a little stock, dot with butter, cover and cook for 1 hour at 350
degrees. Remove cover and bake for another 20-30 minutes to brown
potatoes.
