Calabacitas [ Mexican Succotash - Little Squash ]

Serves: 6

4 yellow squash,sliced
1 large onion,chopped
3 tablespoons vegetable oil
2 garlic cloves, minced
4 ounces green chilies, chopped
16 ounces whole kernel corn
1 cup cheddar cheese, grated

Combine squash slices, chopped onion, minced garlic in oil. Saute until
barely tender. Add chilies, corn and cheese - mix well. Bake in buttered
casserole at 400F for 20 minutes.
