With a pastry blender, cut in shortening and butter until mixture resembles coarse meal. Add buttermilk, stirring with a fork to form a soft dough. With floured hands, knead dough gently 4 times in bowl. Follow directions for Chicken and Root Vegetable Pot Pie top crust. For biscuits: Pat dough to 1/2 inch thickness. With a 2 inch cutter, dipped in flour, cut as many rounds as possible, gathering scraps of dough and cutting more rounds in same manner. In a small bowl beat together egg and 1 tablespoon water. Turn dough out onto a lightly floured surface and knead 5 or 6 times. Roll or pat out to an 8 inch circle about 1/2 inch thick. Using a 2 inch round cutter, cut dough into rounds and place on a lightly greased baking sheet, about 1/2 inch apart. Dough should be very wet at this point. Pour remaining flour out onto work surface and flour hands. Using an ice cream scoop, scoop out 2 tablespoons of the dough into the flour, gently shape into a round and place in prepared pan. Continue till all dough is used.
