Buttermilk Biscuit Dough

3 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 1/2 tablespoons salt
1/4 cup vegetable shortening -- cold
2 tablespoons unsalted butter -- cold and diced
1 1/3 cups buttermilk
1 egg
1 tablespoon water

In a large bowl whisk together flour, baking powder, baking soda and
salt.
With a pastry blender, cut in shortening and butter until mixture
resembles coarse meal. Add buttermilk, stirring with a fork to form a soft
dough. With floured hands, knead dough gently 4 times in bowl.
Follow directions for Chicken and Root Vegetable Pot Pie top crust.
For biscuits:
Pat dough to 1/2 inch thickness. With a 2 inch cutter, dipped in flour,
cut as many rounds as possible, gathering scraps of dough and cutting more
rounds in same manner. In a small bowl beat together egg and 1 tablespoon
water. Brush biscuits with egg wash and bake in a preheated 450 degree
oven
for 12 minutes, or until golden.

Buttermilk Biscuits

2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon sugar
3 tablespoons vegetable shortening
3 tablespoons butter -- softened
3/4 cup buttermilk

Preheat oven to 425 degrees.
Sift the flour, salt, baking soda, baking powder and sugar into a large
bowl. Add the shortening and butter. using a pastry cutter, or two knives,
cut in shortening and butter until mixture resembles coarse cornmeal.
Add the milk and stir lightly with a fork. Turn dough out onto a
lightly
floured surface and knead 5 or 6 times. Roll or pat out to an 8 inch
circle
about 1/2 inch thick.
Using a 2 inch round cutter, cut dough into rounds and place on a
lightly
greased baking sheet, about 1/2 inch apart. Place in the lower portion of
the oven and bake for 12 - 15 minutes, or until golden brown.

Amish Biscuits

1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons baking powder
2 eggs -- beaten
1 cup Amish Starter
1/4 cup vegetable oil
1/4 cup butter -- melted

In a large bowl combine flour, baking soda, salt and baking powder.
In a separate bowl combine eggs, Amish Starter and oil. Mix well.
Add starter to dry ingredients and mix until dough pulls away from
sides
of bowl. Transfer to a lightly floured surface and roll until 1/2 inch
thick. Using a 3 inch circle cutter or floured glass cut out biscuits and
place on a lightly grease cookie sheet. Brush top of biscuits with melted
butter. Cover and let rise 30 minutes.
Bake in a preheated 350 degree oven for 15 - 20 minutes.

Amish Starter

Do Not Refrigerate. Do Not Use a Metal Spoon.
DAY 1 -
In a large bowl combine 1 cup sugar, 1 cup all-purpose flour and 1 cup
milk. Stir well, cover and let sit at room temperature.
DAY 2 -
Uncover, stir then recover.
DAY 3 -
Uncover, stir then recover.
DAY 4 -
Uncover, stir then recover.
DAY 5 -
Add 1 cup sugar, 1 cup flour and 1 cup milk
DAY 6 -
Uncover, stir then recover.
DAY 7 -
Uncover, stir then recover.
DAY 8 -
Uncover, stir then recover.
DAY 9 -
Uncover, stir then recover.
DAY 10 -
Add 1 cup sugar, 1 cup flour and 1 cup milk. Stir then transfer into 1
cup containers to be used to make Friendship Bread, Cinnamon Bread, etc.

Biscuits-Touch of Grace

Amount Measure Ingredient -- Preparation Method

2 cups all-purpose flour
3 teaspoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3 tablespoons vegetable shortening
1 cup buttermilk -- (1 to 1 1/8)
2 tablespoons butter -- melted

Preheat oven to 475 degrees and grease an 8" round cake pan.
In a medium mixing bowl mix together flour, sugar, baking powder,
baking
soda and salt. Cut in shortening until the size of peas. Stir in the milk
until dough is wet. Let stand 2 - 3 minutes. Dough should be very wet at
this point.
Pour remaining flour out onto work surface and flour hands. Using an
ice
cream scoop, scoop out 2 tablespoons of the dough into the flour, gently
shape into a round and place in prepared pan. Continue till all dough is
used.
Brush tops with melted butter and bake 16 - 18 minutes.
