Put the mixture into a mixing bowl and add the egg, flour, parsley, salt and pepper. Whisk together. Heat 2 tablespoons oil in a non-stick skillet over medium high heat. Drop batter by tablespoonfuls into the oil and fry until golden turning only once. Heat oil in a skillet over medium high heat. Drop 1 tablespoon of the fritter batter into the skillet and cook, turning, until both sides are well browned about 1 1/2 minutes per side. Continue until all batter is gone. In a small bowl combine eggs, milk and corn. Add corn mixture to dry ingredients and mix until just barely moistened.
