Default 16 Bean Soup

16 Bean Soup

Most large markets carry a bean mixture in their dried bean section. The
one I found had 16 varieties. This is a meatless soup, but very filling.
It could be made vegetarian by leaving out the chicken bouillon.

1 lb Dried Bean Mixture
1 Onion,Chopped
1/2 cup Celery,Sliced
1 Carrot,Sliced
1 Tbsp Low Sodium Chicken Bouillon
1 cn Low Sodium Tomatoes
1/2 tsp Black Pepper
6 cup Water

Soak and drain beans. In a large saucepan or Dutch oven combine all
ingredients. Bring to a boil. Reduce heat, cover and simmer
until beans are tender, about 1 1/2 hours.

Yield: 8 Servings
