16 Bean Soup
Most large markets carry a bean mixture in their dried bean section. The one I found had 16 varieties. This is a meatless soup, but very filling. It could be made vegetarian by leaving out the chicken bouillon. 1 lb Dried Bean Mixture 1 Onion,Chopped 1/2 cup Celery,Sliced 1 Carrot,Sliced 1 Tbsp Low Sodium Chicken Bouillon 1 cn Low Sodium Tomatoes 1/2 tsp Black Pepper 6 cup Water Soak and drain beans. In a large saucepan or Dutch oven combine all ingredients. Bring to a boil. Reduce heat, cover and simmer until beans are tender, about 1 1/2 hours. Yield: 8 Servings Per Serving: 206 Calories 14 g Protein 1 g Total Fat 0 g Saturated Fat 0 g Polyunsaturated Fat 0 g Monounsaturated Fat 38 g Carbohydrates 9.5 g Fiber 57 mg Sodium 1149 mg Potassium 0 mg Cholesterol Diabetic Exchanges 2.5 Starch 0 Fruit 0 Milk 0 Other Carbohydrates 1 Vegetable 0 Lean Meat 0 Very Lean Meat 0 Fat -- Rec.food.recipes is moderated by Patricia Hill at .
