Impossible Taco Pie

Impossible Taco Pie

1 lb. ground beef
1/2 cup chopped onion
1 env. (1 1/4 oz.) taco seasoning mix
1/2 cup chopped green chilies
1 1/4 cup milk
3/4 cup Bisquick
3 eggs
2 tomatoes, sliced
1 cup shredded cheddar cheese

Preheat oven to 400 degrees. Grease a 10" pie plate. Brown beef and
onion
over medium heat and stir in seasoning mix. Spread in the pie plate,
sprinkle with chilies. Beat milk, Bisquick and eggs until smooth. Pour
into pie plate. Bake for 25 minutes. Top with tomatoes, sprinkle with
cheese. Bake until knife inserted in center comes out clean, about 8 to
10
minutes. Cool for 5 minutes before serving. Serve with sour cream,
chopped
tomatoes and shredded lettuce if desired. Makes 6 to 8 servings.




Impossible Cheeseburger Pie

1 lb. ground beef
1 1/2 cup chopped onion
1/2 tsp. salt
1/4 tsp. pepper
1 cup shredded Cheddar cheese
1 1/2 cup milk
3/4 cup Bisquick
3 eggs

(Note: 9 inch pan, decrease milk to 1 cup, Bisquick to 1/2 cup, and 1
egg.) Heat oven to 400 degrees. Lightly grease 10 inch pie plate.
Cook and stir, beef and onion until brown. Drain. Add salt and pepper.
Spread beef mixture in plate. Sprinkle with cheese. Beat rest of
ingredients until smooth. Pour into pie plate and bake about 30 minutes
until golden brown. Let stand for 5 minutes.


Impossible Reuben Pie

8 oz. can sauerkraut
1/2 lb. (1 3/4 cup) corned beef,
cooked, diced medium fine
4 oz. (1 cup packed) Swiss cheese,
shredded medium fine
1 cup milk
3/4 cup biscuit mix
1/3 cup real mayonnaise
2 Tbsp. chili sauce
3 lg. eggs

Drain sauerkraut, pressing out liquid. There should be 1/2 cup kraut.
Sprinkle the bottom of a buttered, clean glass, 9 x 1 1/4 inch pie plate
with corned beef. Top with the cheese and then with the kraut. In an
electric blender, at high speed, whirl together until smooth: the milk,
biscuit mix, mayonnaise, chili sauce, and eggs, about 15 seconds. Pour
into pie plate. Bake in a pre-heated 400 degree oven until bottom and
sides are well-browned and top is golden, 30 minutes. Let stand about 5
minutes. Serve at once. (Can make before and reheat.)




Impossible Tuna Pie

1 can tuna, 6 1/2 oz.
1 cup shredded Cheddar cheese
3 oz. cream cheese, diced
2 1/2 - 3 cup broccoli, green pepper, corn or carrots to make total
Diced onion and pimento for color

Liquid:
4 eggs
2 cup milk
1 cup Bisquick
1/2 tsp. salt
1/8 tsp. pepper

Grease 10 inch quiche pan or large pie plate. Put tuna, Cheddar cheese,
cream cheese and 2 1/2 - 3 cups vegetables in pan. Mix together in
small bowl and beat until smooth eggs, milk, Bisquick, salt and pepper.
Chicken, leftover meats can be used for tuna to equal 1 cup. Pour
liquid mixture over vegetables in pan. Bake about 45 minutes at 400
degrees. Cool 5 minutes before cutting into wedges. Serve with fruit
juice, fresh fruit salad or clear vegetable soup. It makes a neat
luncheon menu. Serves 6-8.
