Basic Drop Cookies

Amount Measure Ingredient -- Preparation Method

1 cup butter or shortening -- (2 sticks)
3/4 cup granulated sugar
3/4 cup brown sugar (light or dark) -- packed
1 teaspoon vanilla
2 large eggs
2 cups King Arthur Unbleached All-Purpose Flour
1 cup King Arthur Traditional Whole Wheat or 100%
White Whole Wheat Flour
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup milk

Preheat oven to 375 F.
Cream the butter and sugars together until light. Add the vanilla and
eggs and beat until the mixture becomes fluffy.
Thoroughly combine the flours, salt, baking powder and baking soda.
Add about 1 cup of this mixture to the butter mixture. Blend in the
milk, and then the remaining dry ingredients.
Drop the dough from a teaspoon or tablespoon (or cookie scoop)
depending on the size of cookie you want, onto a lightly greased (or
parchment-covered) baking sheet and bake from 10 minutes (small
cookies) to 14 minutes (large cookies), or until the edges are
beginning to brown. Yield: 3 to 5 dozen, depending on size of cookies.
Nutrition information per serving (one 3-inch cookie, 19 g): 80 cal, 4
g fat, 1 g protein, 4 g complex carbohydrates, 5 g sugar, 18 mg
cholesterol, 87 mg sodium, 27 mg potassium, 18 mg calcium, 18 mg
phosphorus.

NOTES : This kind requires the least amount of fussing and can be
baked whenever the spirit moves you. This particular recipe will make
3 dozen 3 1/2- to 4-inch (large) cookies or 5 dozen 2 1/2- to 3-inch
(smaller) cookies. In it we've included some whole wheat flour and
some brown sugar for more texture and flavor.
