Default Pollo Ala Vera Cruz

Pollo Ala Vera Cruz

1 chicken cut up
1/3 cup Green olives with pimento
2 Tbsp capers
1 tsp Oregano
Juice from one lime or lemon
4-5 tomatoes seeded and chopped
1 pinch saffron
1 cup chicken stock
1/2 cup White wine
1/3 cup Olive oil
4-5 cloves garlic ...mashed
1 large onion chopped
2 cubanelle peppers or one large bell pepper chopped
1 jalapeno pepper seeded and minced ( or leave the seeds in if you want it
hot)
Salt and Pepper to taste

brown cut up chicken in the olive oil , and drain off the excess olive
oil, and remove the Chicken . add the garlic onion capers and olives ,
oregano , Peppers,and saffron, and citrus juice..sautee for maybe 5 mins ,
and add the tomatoes and chicken stock and wine and salt and pepper to
taste replace the chicken and simmer uncovered for 30-35 mins or untill
chicken is tender Serve with hot rice.
