For GreenJello. This matches all your criteria. It is simple but
classic. Hotness is to your taste, depending on what kind of chili powder you use. I use Gebhardt's. BTW, I don't know what "jailhouse" this came from. ;-) Jailhouse Chili 1/2 lb. beef suet, ground 2 lbs. beef round steak, cut in small cubes 3 cloves garlic, crushed 1 1/2 teaspoons paprika 3 Tablespoons chili powder, hotness to taste 1 Tablespoon cumin seed, crushed salt and pepper to taste 3 Cups water 2 cups pinto beans 2 Tablespoons bacon fat Put the suet, meat and all the seasonings in a large heavy pan. Fry until suet is rendered and meat is light brown. Add 3 cups of water. Cover and simmer 3 - 4 hours. Serve with tortillas or cornbread, and have chopped onions and grated cheese on the side for people to add as they wish. Soak the beans overnight. Drain and add fresh water to cover them by an inch. Add the bacon fat and cook until soft but not mushy. Add beans to chili just before serving, or serve them on the side. 6 - 8 servings -- Rec.food.recipes is moderated by Patricia D. Hill at .
